What does paddock to plate actually mean? 🥩 We spent a day with Nolan Meats Pty Ltd and Meat & Livestock Australia recently to find out. Led by QLD & NT Executive Chef, Alex Bartkowiak , a number of ALH Head Chefs and Apprentices from QLD donned their best farm friendly boots and took a trip up to Gympie to spend some time with Terry Nolan and the team at Nolan Meats, one of our Premium meat producers for 350+ venues. Immersing the team in the journey of the beef process, our chefs were hands on in learning every step of the operations, from the feedlots through to the processing facilities (while stopping for a few delicious red meat dishes along the way curated by celebrity chef Matt Golinski 🍽️). It's just one step we're taking to invest in our chef education and training, while also ensuring we're ethically sourcing and understanding where our local produce is coming from. Big thanks to Terry and the team at Nolan Meats and MLA for allowing us to spend the day learning from the best.

This week we said hello to our newest local, The Cavenagh Hotel 👋 Serving the people of Darwin, the Cav has been a mainstay of the community since opening its doors in the 1930's, and we're sure if walls could talk, we'd hear a story or two. Head to the bistro for dinner and drinks, or pack a bag and enjoy a staycay in the heart of Darwin's CBD. Make sure you pencil in a day to spend poolside, it's the best way to relax 🏊 (trust us). The doors are officially open at The Morris 🥂 Last week we welcomed back our guests to their local (on Whadjuk Noongar country) formerly known as The Saint, and what a week it's been. Reconnecting with it's roots, the team has brought back the original name of The Morris, where the uniquely Perth atmosphere is prevalent in every corner of the brand new space. A complete renovation see's a brand new sports bar (with a huge big screen to catch all the action), a hall and courtyard come to life, with a refreshed menu dedicated to celebrating the best of the west produce and local suppliers 🦐 Plus, the kids are covered with a number of snack-type sides to go with their main which gives them the freedom to eat at their own pace. "The Saint has played an invaluable role for the community for many years, we're thrilled to be able to return the local icon to its former glory, reintroducing the original name of The Morris. In the refurbishment, we've kept the best elements of the past to bring together a cohesive environment that represents what it means to be uniquely Perth. Can you feel yourself thawing out? Just one more month of winter to go (and a few more weeks to enjoy winter menus across the pubs) ❄️ All through the season our chefs have been warming bellies, hearts and minds, and although we're excited for the sun to come back, we've been thoroughly enjoying a few cosy favourites while we can. Curated by our National Executive Chef, David Finlayson , in collaboration with state culinary experts across the country, guests have had their pick of perfectly cooked steaks, piping hot pizzas and hearty chicken parmas (or parmi's 🤷). One burger to rule them all (or at least just South Australia) 🍔 A huge congratulations to Ryan Davey, Head Chef of the Belgian Beer Cafe for taking home the 2024 Best SA Pub Burger Challenge Award. Beating 12 tough competitors to take the win, Ryan dedicated his victory to his team, he said, "I am very proud to win this award. I couldn’t have done it without my entire Belgian Beer Café team. Being a chef is a job that requires passion. If you’re interested in the hospitality industry, leave nothing behind and go for it! It’s fun, you’ll meet so many people, and have a skill that can take you anywhere!” Hat's off to Ryan for the win, if anyone needs a taste tester for next year, we're here if you need 🙋

Last week our teams in Queensland took part in Gambling Harm Awareness Week, a government initiative promoting safer gambling practices in the community. Speaking with guests on safer gambling practices, team members setup designated areas offering access to services and information on harm prevention, a true testament to the team and our commitment to fostering a culture of responsibility.

New Brighton Hotel, a beachside local for locals (of all kinds) 🐦 This cracking multi-level pub on Gayemagal land recently welcomed a new addition to the walls, thanks to artist Brentos . Inspired by the cockatoos regularly perched on the balcony railings of the pub, Brentos recreated the view.... with a twist. Partnering with Sydney Wildlife Rescue, the mural includes a QR code to 'buy a Wildlife Carer a beer', with the funds going directly to help rescue, rehabilitate and release sick native animals. Having a beer with mates? Help Aussie wildlife 🍺 Love this creative initiative from the New Brighton Hotel Publican, Henry.

Recognise this building? Well then, you probably tuned into Masterchef last week 🍽️ Our very own brewhouse, The Cheeky Squire (on Bunurong land), known to locals for honoring James Squire's craft beer legacy, hosted the Mystery Box challenge. Contestants were challenged to elevate pub classics, and we loved seeing some extraordinary dishes head out for service in the iconic Frankston institution. Big thanks to our partners at Lion 👏
