We are proud to share that last week, our Patina 250 restaurant hosted the latest installment of our popular Guest Chef event series held quarterly in Buffalo, New York. The event, Smoke Show, was a collaboration between Patina 250 Executive Chef Evan Wargo and 2024 James Beard Emerging Chef Finalist Ryan Fernandez, acclaimed pitmaster and owner of Southern Junction restaurant in Buffalo. Guests attending the sold-out event were taken on a smoker-to-table culinary adventure, highlighting Fernandez’s unique BBQ style, melding traditional Texas techniques with South Indian flavors. 

“The latest Guest Chef dinner was truly unique and the most immersive experience to date,” Wargo said. “Chef Ryan and the culinary team operated out of a satellite kitchen in the courtyard, smoking all the meat and fish onsite, and giving guests a glimpse into the craft of BBQ cooking.” The event began with passed appetizers and specialty cocktails: Gimme More, featuring gin, house-made tonic and soda and, Oh, That’s Classy, featuring bourbon, peach liqueur, honey ginger syrup and lemon. Guests enjoyed a five-course dinner featuring Banana Leaf Salmon, Smoked Lamb Rib, Pork Steak, Burnt Ends Brisket and Fried Plantains Foster. 

The event was planned in partnership with our terrific partner, Jodi Battaglia and Curate Hospitality, Corp, which connects chefs and guests with tailored hospitality experiences. These dinner events continue to offer a unique opportunity for guests to sample local chefs in an elevated way, while at the same time inspiring our team by introducing new techniques, flavors and cuisines,” Wargo said. 

Tickets are available for the next Guest Chef series event set for Oct. 10, celebrating fall’s bounty and featuring Indigenous cuisine from Guest Chef Lorinda of the Seneca Nation, who has also collaborated with Delaware North Sportservice at Highmark Stadium, home of the Buffalo Bills.

We were thrilled to play a role in the recent MLB All-Star week celebration held at Globe Life Field in Arlington, Texas, alongside chefs and team members from all around Delaware North and our Delaware North Sportsservice division to help feed guests at the Midsummer Classic.

Meet our very own Chef Morgan Jarrett, currently at the helm of STATE Grill and Bar, our unique restaurant offering at the Empire State Building in New York City. Chef Morgan grew up in rural Texas where she learned an appreciation for the work that goes into raising and growing your own food. Those lessons guided her from her work at the French Culinary Institute of America in Manhattan to her first restaurant job in Brooklyn where she focused on true farm to table cooking blended with genuine neighborhood hospitality.
 
As the opening chef for Yellow Magnolia Café, Morgan worked directly with horticulturist at the Children’s Garden and Herb Garden where she was able to coordinate planting, harvesting, and the design of special menus and events including the Annual Spring Gala and Cherry Blossom Festival. In her current role at State Grill & Bar she collaborates with renowned partners including Afterlife Mushrooms and Marsh Hen Mill to help the team continue to explore what farm to table looks like in today’s ever evolving culinary landscape. #CulinaryExcellence

With the spirit to support our communities more important than ever before, we are proud to share that Patina Restaurant Group has been working in partnership with several nonprofit organizations throughout the country in a growing volunteer concessions program tying back to our role as official catering partner for PGA of America events. In preparation for these event experiences, Patina Restaurant Group reaches out to select NPOs more than a year in advance to begin collaborating on ways to leverage the volunteer concessions program to support important causes.

This year during the Men’s Championship at Valhalla Golf Club in Kentucky, we partnered with a number of inspiring organizations including Home of the Innocents, which provides residential and community-based behavioral health services, therapeutic foster care and adoption services, services for young adults experiencing homelessness, and long-term care for children with complex medical needs, HOPE COLLABORATIVE, which provides spaces and trauma-informed programs where individuals can build strong connections with others in their community while they grow and heal, and Travel to Hope, which provides funding and support for cancer patients to travel to receive life-sustaining care. 

“These collaborations enhance the event experience and serve as a powerful platform for raising funds and awareness for deserving causes,” said Ali DenDanto, PHR, human resources manager for Patina Restaurant Group. “It is inspiring to witness the collective effort and impact of these NPOs and volunteers coming together to support their missions and communities.”

Planning a visit to Orlando this summer? We are thrilled to share that one of our most beloved Patina Restaurant Group offerings, Morimoto Asia, is participating in the annual Flavors of Florida event, a celebration of Florida-inspired food. Running from July 1-August 11 at participating restaurants throughout Disney springs, Morimoto Asia is offering the Florida Key West Pink Shrimp Salad and Sparkling Shiso Orange cocktail to help commemorate the occasion. 

Executive Chef Takeshi Ikeuchi and Mixologist Junko Perreco recently led a culinary demonstration to highlight the locally sourced menu items for visitors. “The team at Morimoto Asia is thankful for the unique opportunity to educate and inspire the Central Florida community by highlighting ingredients that grow right here in our own backyard,” said Paul Snyder, general manager at Morimoto Asia.
