Wicked Cookie Dough Ice Cream Sandwich — you’re going to want to save this one! INGREDIENTS: X1 tub Wicked Kitchen Cookie Dough Ice Cream from Tesco 320g plain flour 1tsp baking powder 1tsp bicarbonate of soda 120g vegan butter 180g soft brown sugar 1tsp vanilla bean paste 80ml oat milk 200g vegan chocolate chips + extra for rolling the ice cream sandwiches in (optional) METHOD: 1. Mix together your butter, sugar and vanilla. 2. Add in your dry ingredients and mix until combined. 3. Add in half your oat milk, stirring as you do so, and then add in the other half. 4. Once combined, add in your chocolate chips. 5. The mixture will be quite soft so scoop with an ice cream scoop into balls onto a baking tray. Refrigerate for at least two hours or freeze. 6. Bake for 10 mins at 180c fan. Leave to cool for 30 mins. 7. Slice your tub of ice cream into 5 pieces. Sandwich between two cookies and dip into chocolate chips.
