In a world where over 800 million people still go hungry, the fact that we waste one third of all food produced is deeply, deeply painful and unfair. And it gets worse: wasted food contributes so much in greenhouse gases that, if it were a country, food waste would be the third-highest greenhouse gas-emitting nation in the world, behind the US and China. 🌏 At Elevate Farms, we have a scalable solution to offer to significantly reduce food waste. ↘ 💡 But before we share how, let’s recognize that this is a problem that is hard to fully grasp, and impossible to solve with single, silver-bullet type solutions. To start with, Food Waste occurs at every stage of the food supply chain: on fields, during harvest, and post-harvest in processing, storage and transportation (what the FAO calls “Food Loss”) as well as during distribution in transport, storage and, of course, consumption at home and in restaurants (called “Food Waste”). Globally, that adds up to an intolerable 2 billion tons of food that are lost or wasted annually. Fruits & vegetables account for 28% of the total, contributing ~17% of the CO2 emissions associated with food waste. So, what is Elevate Farms doing to help? 🔎 Elevate’s vertically farmed food production significantly reduces food loss (remember the FAO definition above?) in several ways: - First, we produce and grow only as much as is needed. We tailor our production to buyers’ demand planning and adjust our production on a 30-day rolling forecast so that we can react much better to changes in demand. Should we still produce more than needed, we always make an effort to donate our produce to local organizations. - Second, because we do everything from seed to harvest to packaging in-house in automated processes, we skip the cleaning and extra processing to which salad is usually subjected (sometimes 3 or 4 times before it arrives on your plate). That means our salad grows up entirely protected from anything harmful and is as fresh & clean as it can be, with minimal loss during growing and harvesting. 🍃 📍As for food waste, our greens are packaged and ready to ship the same day they are harvested, reaching buyers the day after harvest. This ensures they stay fresh longer – on the shelf and in the fridge! And of course: we produce locally, meaning we drastically reduce transportation (we’re talking thousands of miles) and thus minimize the chance of spoilage and damage between the farm and the consumer. While we contribute to reducing food waste, a broader systemic shift is needed. This conversation is lengthy and can be uncomfortable, requiring collaboration between buyers and suppliers to drive meaningful change. We’re doing our bit and look forward to that conversation. 🌱📊 Shedding Light on Our Production Numbers We believe our industry will grow faster if we’re willing to share more. To that end we'd like to unveil a key production insight today: Elevate’s GravityFlow system yields what we believe to be an industry leading 152 kg/m² annually. In the world of vertical farming, where we operate on stacked levels, that’s 152 kg/m² per level. At 11 layers in our New Jersey farm, that amounts to an impressive 1669 kg/m² of ground space – a pretty astounding use of space in a world that’s low on arable land and high on damaged soil. To put these numbers into perspective, conventional farming typically yields around 4 kg/m², while greenhouses we’ve seen typically range between 40-80 kg/m². To be clear: we’re aware that vertical farming is just one part of a bigger systems shift in agriculture. We believe in collaboration with other food system solutions and regenerative practices where possible, and both field agriculture – especially regenerative – and well-run greenhouses have an important place alongside our technology. The world is too complex for just one way to grow leafy greens and other crops. In that spirit, leave us a comment below if you have other numbers to share – we’re happy to compare and collaborate. For Elevate, it’s our science-first approach that enables us to achieve our numbers, combined with our fully automated grow tunnel. He adds deep food business management expertise to the team, having held several senior marketing, sales and management roles in both Asia and Europe, most recently as Head of Marketing at Dr. Oetker Ibérica. 🌿 Delving into Water Efficiency! 💧 Following your interest in our recent water efficiency post, we decided to share some more details. You ask, we deliver! We’re very happy to have these conversations 🌱 So, what does using 95.3% less water really mean for Elevate Farms? Let's break it down: our New Jersey vertical farm utilizes only 0.012m3 to produce 1 kg of lush leafy greens. To put it in perspective, that's equivalent to roughly 12 liters per kg. Still seem like a lot? We thought so too. But consider this: you use about the same amount of water when showering for just 2 minutes. 🚿💦 Now, let's compare this with conventional, field-grown production, where water consumption skyrockets up to 250 liters per kg, based on data from Yuma, Arizona.*🌾 That is a lot of showering – over 40 minutes, to be exact. Now, we know our colleagues on the fields are getting more efficient all the time: there are tons of innovations to improve water efficiency in the works. And that’s great: the earth needs it, we’re rooting for them. Greenhouses are a good alternative - they’re already significantly more water-efficient, at around 20 liters per kg*. But here's where efficient vertical farming can truly make a significant difference: our 12 liters per kg include the whole process, from seeding to packaging, all within the same facility. ♻️🌍 Field and greenhouse metrics only include irrigation, but there is typically a lot of water use in washing and sorting produce post-harvest. One of our secrets? We recycle all our HVAC (heating, ventilation & air conditioning) drain water, and our produce doesn’t need to be washed after harvest: it’s always been clean ✨😃 Besides water efficiency, there are plenty of other benefits to Elevates vertical growth system: we also reduce food miles, increase shelf life and reduce food waste, and eliminate cross-contamination risks. Oh, and the stuff’s just incredibly delicious. An independent third party audit has officially confirmed that Elevate Farms utilizes 95.3% less water than traditional farms, spanning across every aspect of our operations – from cultivation to processing and cleaning. 💧 But here's the untold story: when we dive deeper into an apples-to-apples comparison, the impact is even more significant. With conventional farming methods, processing and cleaning aren't factored into the water usage calculations.
