What’s the best way to solve a complex problem? 

Clue: it’s a method as ancient as civilization itself.

Correct! To gather around the dinner table and discuss the matter.
 
Last Tuesday, farmers, bakers, brewers, breeders, millers, and researchers - the whole grain chain - gathered in the cozy space at Lille Bakery for important discussions about the future of grains.

Promoting local, organic grains is complex. Partly, because quality means different things for different actors. 

“Why, oh why, not rye?" cried the farmers, pointing out how they are robust and grow stable yields.

“More protein! More flavor!” said the bakers.

We, Asmus and Sofie, joined to share historical insights and our mapping of Danish grain flavor profiles. By understanding how food habits change, we can shape the future. By putting words to the diverse flavors, we hope to spark culinary curiosity and creativity.

The biggest thanks to Lille Bakery, Grønt Marked, Landsorten, Vild Hvede, Radikal Hospitality, and everyone involved. It was a remarkable event. We are looking forward to the next in 2024!
