Our taste buds had a field day thanks to New School Foods ! Auke de Vries , Chris Bryson , and Plamen Nikolov wowed us with an R&D deep dive and interactive tasting session that made plant-based fish the star of the show 🎣 Myo Palate impressed with cutting-edge research, led by Charlie Hua , showcasing innovations that could change how we think about nutrition and performance. Rather than raising an entire animal for food, the Myo Palate team takes a small sample of cells and grows them under precisely controlled conditions. This innovative approach allows them to produce the same meat—without animal suffering and with a dramatically reduced environmental impact. Thanks to the brilliant Myo Palate scientists, Derek Toms and Loris Fossier , we got an up-close look at where the future is being cooked up during a tour of their lab! 🔬👩🔬 Next, RxFood Corporation had Jeff Alfonsi, MD, FRCPC, DipABLM, DipABOM , Derrick Lichti , and Elizabeth Choi breaking down the science behind personalized nutrition with the potential to transform the way we eat and improve our overall health by addressing individual dietary needs, reducing the risk of chronic diseases, and enhancing our well-being.
