𝗧𝗼𝗿𝘁𝗶𝗹𝗹𝗮 𝗯𝗿𝗲𝗮𝗱 is well-known for its uniform round shape, flat with a crusty color, and mainly for its uniqueness of being flexible and easily foldable to be used as a perfect wrap for stuffing food, making it a joyful meal. But if not well made, the bread might get too sticky or lose its uniform shape, and on top of all as the worst result is that it can easily crack when folded especially if it’s some days old. Different factors may cause that, whether the ingredients, processing conditions or weak flour components, specifically starch and protein. The solution to avoid all these problems is the usage of enzyme additives with just a few grams as a bit of magic with fascinating results. α-Amylase works well on texture while improving the crusty color. Adding xylanase and lipase improve its flexibility and make it easy to fold without breaking. All three work on improving the dough properties as well as proteases and glucose-oxidases as they work additionally on making the dough soft, and easy to work with, besides improving its stability and machinability. Without of course not forgetting to add maltogenic amylase to extend the shelf life and the softness for longer periods. But the enhancement doesn't stop there. These enzymes not only improve the quality of Tortilla bread but also contribute to its nutritional profile and allow the replacement of chemical additives, making it a wholesome choice.
