🍃 Exciting Times at the NIZO Plant Protein Functionality Conference! 🍃 After almost five years since living in the Netherlands it was great to be back and participate in the 3rd NIZO Plant Protein Functionality Conference. It was inspiring to see the advancements being made at the intersection of academia and industry in the plant-based food sector. Here are a few of my takeaways from the conference: ✨ Opportunities for Improvement: Taste, texture, and functionality challenges in plant-based products present significant opportunities, especially in categories like vegan cheeses, milk alternatives and meat analogues. ✨ No One-Size-Fits-All: Techno-functionality varies widely based on protein source, processing methods, and intended applications. Custom solutions are essential for success. ✨ Innovative Protein Extraction: Exciting advancements are being made in by-product protein extraction, including okara protein and green leaf protein, which can lead to more sustainable practices. ✨ AI in Functionality Prediction: Could AI help predict the functionality of proteins that have undergone different extraction processes? This could revolutionize product development in our field! As several presenters highlighted, the challenges in the plant protein space also create abundant opportunities for innovation and growth. I’m excited to see where these developments will take us!
